My Favorite Simple Recipes

For part two of my series on what to do while social distancing, here are some of my favorite recipes you can make while stuck at home. Personally, I have been cooking and baking non-stop. It is a great hobby because you get immediate gratification! Better yet, you do not need to be a professional chef to make something delicious. Using ingredients in your pantry, the opportunities are endless. Here are some recipe ideas to get you started, and check out my Pinterest dinner, dessert, and breakfast boards to see what else I’m cooking.

Homemade pasta with roasted tomatoes, basil, and garlic breadcrumbs, mushrooms and goat cheese, or whatever you have on hand!
Tip – keep the pasta noodles separated after cutting them to avoid sticking
Roasted tomato soup … a family favorite (don’t worry if you don’t have the other vegetables; I rarely do)
Tip – I use a blender for the tomatoes, which works well
Roti (or chapati, like naan) … I paired them with lentil curry
Galette … I used linked recipe for the crust, and topped it with fig preserves, goat cheese, caramelized onions, and pears, but you can use toppings of your choice!

Tip – learn from my mistake and butter the pan a lot to avoid breaking the cake when you release it from the pan
Avocado quinoa harvest bowl or a tropical buddha bowl … bowls are great because you can use any grains, fruits, and vegetables you already have
Pear and goat cheese tart … you can sub in any fruit or cheese, really!
Risotto … like this one with mushrooms
Tip – my pan burned, so next time I will add more butter to the pan beforehand and more water throughout the cooking process
French toast casserole … one of my favorite recipes that is made the night before to ease stress the day-of
Tip – before adding the topping, stir the bread cubes again to ensure none of the cubes on top are still dry
Chocolate chip skillet cookie … one pan for an easy and insanely delicious dessert
Tip – the cookie is supposed to be gooey, even when it is done cooking
Lemon blueberry bread like this one, apple fritter bread, or pumpkin bread … all tried and true recipes

Two final recipes…

Gnocchi with sage, butter, and parmesan … I do not have a photo, but this is a simple family favorite

Peach (or any fruit) crisp … delicious, simple dessert, and you can use apples, berries, etc. instead of peaches
